22/12/2011Enchilada is Mexican corn tortilla (flat cake) with stuffing, seasoned with chili sauce. It may be stuffed with a lot of things – meat, cheese, beams, vegetables, fish or seafood.
Enchilada is past participle from spanish verb enchilar which means «to add сhili sauce to something».
Even ancient Maya indians were rolling fish in maize flat cakes. This food was met fine by Spanish conquistadors. In XIX century the recipe of Enchilada was included in the first Mexican cookery book – El cocinero Mexicano.
